Bread and potatoes?! Yeah!!

Just how amazing this simple focaccia is, I cannot even describe it! You’ll need just a couple of ingredients and will end up with a finger licking result!


Baby potato and rosemary focaccia

Ingredients for the dough:

500 g all purpose flour

10 g salt

15 g fresh yeast

350 ml lukewarm water

Ingredients for the topping:

a couple of washed baby potatoes

extra virgin olive oil (I used olive oil with rosemary, garlic and thyme used for tomato confit)

chopped fresh rosemary


freshly ground black pepper


Mix the flour with the salt. Dissolve yeast in water, add it to the flour mixture and knead till you get a smooth yet soft dough. Cover a metal square oven pan with a generous amount of olive oil, put the dough, add a bit more olive oil on top and spread the dough evenly using your hands.

Slice the potatoes as thin as possible, arrange them on top of the dough, brush with olive oil, sprinkle with finely chopped fresh rosemary, salt and black pepper. Leave the focaccia to double in size. When it’s doubled, press it a couple of times with your finger tips, brush the potatoes one more time with olive oil and bake at approx. 220 degrees till the potatoes crunch up and the dough gets a nice color. Remove immediately from the pan on a cooling rack. Serve warm.
