Raw caramels or guilt-free pleasures

DSC_0601caI’m sure that all of us once in a while think about what we eat and sometimes feel guilty for enjoying too much sweets. Well, here’s a recipe that will take some of that guilt off. It’s a super tasty, raw and simple snack that can look great if you wrap it in nice papers, like the best caramels out there!

Ingredients:

500 g dried dates

100 g toasted almonds

1 tbs solid extra-virgin coconut oil

3 tbsp cacao powder

1/2 scraped vanilla bean

Clean the dates by removing seeds and dried, white parts. Put them with all the other ingredients in the food processor and pulse till you get a smoother paste. Spread it out evenly in a baking pan covered in baking paper, leave in the fridge for half an hour and cut into cubes, ore press smaller amounts of the mixture in silicone chocolate molds. Simple as that and tasty almost as chocolate itself! I’m addicted to these!!
